Vanilla Crunch Granola Recipe

Have you resurrected any old hobby or passion during the past couple of months? Ever since I was a kid, I've always loved cooking. But...the busyness of life took away some of its enjoyment.⁠ ⁠ So now, my 4-year-old and I have brought cooking back in full force. About every two weeks, we whip up homemade granola together. And of course, our music is always jamming! If you're wondering about our playlist, just think Frozen 2 on repeat.

But Stacie, this is a blog about therapeutic yoga, anxiety, and depression. Why post a recipe? Well, if you’re like me, our hearts, bodies, and minds are going through a lot with this pandemic. We’re tired! My mind is craving for closure and since we’re not getting it through life, a recipe can be a simple way to finish a project. Plus it engages your sense of smell which can help you feel present at that very moment. I’m here for that!

Almond Vanilla Granola

Preheat your oven to 300 degrees.

Ingredients:

3 cups quick oats⁠

1 cup unsweetened coconut flakes ⁠

1/4 cup oat bran⁠

3/4 cup almonds⁠

1/2 tsp kosher salt⁠

2 tablespoons olive oil

1/2 cup maple syrup. Add a few extra splashes if you like your granola on the sweet side.

1/2 teaspoon vanilla extract. ⁠

1 egg white

Mix together in a large bowl:⁠

⚪ 3 cups quick oats⁠

⚪ 1 cup unsweetened coconut flakes ⁠

⚪ 1/4 cup oat bran⁠

⚪ 3/4 cup almonds⁠

⚪ 1/2 tsp kosher salt⁠

⁠Stir in:⁠

⚪ 2 tablespoons olive oil

⁠⚪ 1/2 cup maple syrup. Add a few extra splashes if you like your granola on the sweet side.

⚪ 1/2 teaspoon vanilla extract. ⁠

In a small bowl:

Whisk 1 egg white until it's foamy. ⁠ Fold egg white into your granola.⁠

⁠Spread your mixture out on a baking sheet:

*Pro-tip use parchment paper for less cleanup! Place the pan in your oven and set your timer for 20 minutes.

After 20 minutes,

rotate the pan and gently turn the granola over with a spatula. Try not to break up your clusters. They're the best part! Bake for another 20 minutes until golden.

Once your beautiful granola is done:

let it cool completely. It stores for about 2 weeks. I don't add in dried fruit to this granola since my kiddo doesn't appreciate the flavor. If you like it, try adding in some dried cherries or cranberries!⁠
